Blueberry + Dark Chocolate Chip Pancakes

These healthy pancakes take the cake (pun intended) over bisquick for me and the whole fam, including the kids. Perfect for a slow Sunday morning breakfast.

Ingredients 

2½ cups almond milk
2 cups Steel Cut Oats (these are whole grains 👍)
1 banana
1/2 an apple
2 eggs
½ teaspoon Himalayan salt
2 tablespoons coconut oil or olive oil 
1 teaspoon vanilla
1 teaspoon cinnamon
1 tablespoon baking powder 
Dark chocolate chips (dark has so many antioxidants)
Blueberries

Instructions

In a blender mix the milk, oats, banana and apple. Blend for 3 minutes.

Add the eggs, oil, vanilla, salt, and cinnamon. 

Blend for 30 seconds

Add baking powder and blend to combine.

Grill with blueberries and dark chocolate chips.
